How Long Are They Good For?
Our salamis are good for one year after the date they were made. This date is only every one of our packages
How Should I Store Them?
Keep your salamis in the refrigerator for long term storage to keep them at their peak, but they are fine for weeks out in cool room temp if you are giving them as gifts, etc. It does not matter if you have cut into them or not. Just re-wrap them in the paper they came in. Do not freeze your salami, as it does nothing to extend their life and in fact ruins the quality of them.
What is that white powder on the outside? What is that smell when I open the package?
The white you see is the "bloom", a kind of mold that we go through a lot of work to put on our salamis. It improves the tenderness and flavor, and it is perfectly safe - it's related to the white on the rind of many aromatic cheeses. It does produce a mushroomy or ammonia-like smell when trapped in the packaging, but salami lovers learn to equate this with the wonderful flavor inside.
